竹の子ともっちりワカメの若竹煮

昆布とかつおで一番だしを取ります。作り方はこちらの一番だしの作り方を参考にしてください。
お水1リットルから作ると完成で4カップくらいになります。多めに作ってお吸い物につかってもいいですね。

乾燥若布を戻します。乾燥若布の戻し方はこちらを参考にしてください。

一番だしが完成したらだし3カップと酒・みりん・しょうゆをあわせて一煮立ちさせてから、竹の子をくわえてだしが染みるまで煮付け、最後に戻したわかめを加えてサッと火を通して器に盛り、木の芽をのせて煮汁を注いで完成です。
コツ・ポイント
三陸岩手のわかめは少し長めに水戻しするともっちりした感じになります。シャキッとした食感がお好みの場合は水戻しの時間を短めにするか、わかめが軟化しにくい鳴門産のわかめを使うと良いです。
