煮物用一番だしの作り方
材料
だし昆布（利尻・日高・道南・羅臼などお好みで、このレシピでは羅臼昆布を使っています。）
10g（10センチ角くらい）

沸騰したら吹きこぼれないように注意しながら３～５分程度煮込みます。その間アクが出たらすくい取ってください。

ネルまたはキッチンペーパーでゆっくり漉して完成です。
コツ・ポイント
お吸い物のような上品なだしを作る場合沸騰させるのは禁物ですが、煮物用の強いだしの場合沸騰させても大丈夫。
昆布とかつおを同時に入れることも「やってはいけない」と言われていますが、やってみると煮物に適したおだしが出来ます。多少えぐみも出ますが、煮物のような濃いめの味付けなら仕上がりに大きな影響は出ませんので出汁をラクに気軽にとりましょう。
使うかつおは花かつおより煮物用混合だしの方がパンチのあるだしになります。花かつおと混合だしを混ぜてもいいです。作る料理にあわせて煮干しや椎茸を加えても良いです。
