昆布と削り節で作るうどん・そばのつゆ

お鍋に水と昆布を入れて30分程度置いてから火にかけます。
火加減は10分ほどで沸騰する程度ですが少しくらい火加減が強くて沸騰しても、家庭のうどん・そばのつゆの出汁ならぜんぜん大丈夫です。
一気に沸騰するような強火にならないようにだけ気をつけてください。

お鍋から昆布を取り出して、少し差し水を入れてから削り節を入れて弱火にかけて１～２分ほど煮出します。

煮出したらキッチンペーパーで濾して、醤油とみりんで味付けしてうどんつゆは完成です。 もし味がはっきりしないときは塩を少し足してみてください。
コツ・ポイント
昆布と削り節のだしの味をそのまま楽しんでいただく関西風うどん蕎麦のつゆです。
いろんなトッピングしていただくと一層おいしくなりますが、できたらそのまま素うどんで出汁の味をお楽しみください。
昆布だしで最初に30分置くのは、昆布にお水をなじませて少しの昆布からたくさんのおだしを引き出すためです。時間がない場合は昆布の量を増やしていただければお水に昆布を入れてすぐに火にかけても大丈夫です。
