昆布と煮干し（伊吹いりこ）の水だし

容器に材料をすべて入れます。

冷蔵庫で約10時間から20時間置いてキッチンペーパーなどで漉せば出来上がりです。
コツ・ポイント
水だしは冷蔵庫に入れる時間が長いほど濃厚なだしになります。
ただし、あまり長いとだしがいたみますので20時間を限度にして下さい。
水だしでとっただしは透明で、雑味の少ない上品なだしに仕上がります。
20時間近くおくと、雑味が少なく濃厚というとてもよいだしができます。
まだ「だしが弱い」と感じるようでしたら水だし後に少し火を入れると若干雑味が出ますが、さらに濃厚なだしになります。
今回煮干しは伊吹島産の白口のいりこを使いました。伊吹のいりこは煮干しの鮮度が良くて魚くさくないのでいりこの頭は取りませんでした。伊吹島以外の白口煮干しでも頭と腹ワタを取ればさらに魚臭さのないサラッと上品なだしに仕上がります。青口煮干しを使われる際は頭と腹ワタをお取りいただいた方がおいしく上品になります。
